Push And A Winner!

Howdy!

First off I need to apologize for not announcing the winner of the WildTree bread mix!  The winner is Brittany!  I will be sending that out to you shortly so be watching the mail!

Also…I completely forgot to make my Stuff to do or try ASAP.  I will just have to post it this Friday.  No Bake Peanut Butter Protein Bars for the win!

And…I wanted to update you on my work out schedule.  I have gone every day this week and I am totally proud of myself…however…I am realizing that I am not pushing.  I get into my own head too much and bug myself out.  While on the drive to Primal I tell myself, “Don’t rest until your arms/legs truly fail you.  If you do rest just count to 5 and get back at it!”.

I never do that.  I will do 3 pull ups (with bands) in a row and rest…because I tell myself I can’t do a 4th…and I totally could I bet!  I take the weight off the bar telling myself I can’t do it with the extra 10 pounds…without even failing…I just tell myself I will fail so take the weight off….and then I feel like a LOSER!!!!!

So I need to push.  I got my journal back out.

I am not confident and I am not always finishing strong!  I have got to get out of my head.  So starting today(see..I am not even waiting for a Monday!)…I am tracking my WOD’s in here.  Hopefully me seeing progress will help me push even harder.

Toddler Tuesday-Sneaking Veggies

Hey y’all.
I have been keeping the family and I super busy lately and haven’t had time to do anything particularly special with Baby Belle as far as activities are concerned.  We did take her to the Valley Junction Farmers Market last Thursday for Family Fun Night.  She spotted these two princess and darted for them immediately.

photo(5)Notice the leash :)   The princesses were so sweet to her and talked to her for a few minutes and then obliged when I asked if they would pose with her.  She then got all weird about it :(

photo(6)She looks terrified.  The princesses were from Storybook Adventures and I hope to book a party with them soon.  I know she would have a blast with them.

So for Toddler Tuesday I am going to talk about sneaking veggies in Baby Belle’s diet.  She is pretty good about eating fruit….she loves fruit but with veggies she is a little more picky.  She will eat carrot sticks and cucumber once in a while but she would prefer something on the sweeter side :)

Now one veggie she does love is tomatoes.  Remember last year with our tomato jungle?  She also loves noodles.

Now when I attempted to do Whole 30 I learned to read labels a bit better and discovered that for some reason spaghetti sauce had pretty high sugar content.  I even made the mistake of buying a “no added sugar” can to see there still was sugar in there.  Why?  I don’t get that?

I made a HUGE vat of spaghetti sauce this past Saturday and snuck in some veggies to add a kick of nutrients.  No one will ever know…until they read the post (right Kev?).

Now keep in mind when I give you this recipe I made this in bulk.  You obviously could do a single serving if you wanted to.  We just needed something quick and easy for nights we get busy.

 

Bulk Sugar Free Spaghetti Sauce With Sneaky Veggies!

Made 8 servings that will feed 4 and give you leftovers

5 pounds italian sausage

7-28 oz cans of crushed tomatoes

3-14 oz cans of diced tomatoes

3 chopped onions

2 tablespoons diced garlic (I use the kind in the jar and I love love garlic)

1 jar of roasted red pepper (or roast some yourself, how to here)

whatever amount of sneaky veggies you want-I had 4 cups of assorted shredded squash that I had froze previously

7 tablespoons Wild Tree spaghetti blend

 

1.  Brown the sausage until completely cooked.  I didn’t take any pictures of this so hopefully you know how to brown sausage.  Then drain it and add it back into the pan, putting heat on low.

2.  Add chopped onions and garlic and cook until soft.

3.  Add all cans of crushed and diced tomatoes.

4.  Add spaghetti blend and stir thoroughly.

5.  While sauce is simmering I then took my frozen squash which I prepped earlier.   You see…I had some squash dying in my fridge and hated to waste it.  I simply shredded it, squeezed out as much liquid as I could and stored it in the freezer.

photo(4)photo(2)Easy.  I meant to post about this separately but no time better than now.  You could use the frozen squash for recipes like this, making baby food or for breads…lots of options.

So I cooked that up and dumped in a random jar of roasted red peppers in a saucepan and let it cook until it was thawed out completely.

photo(3)6.  Blend it all up and mix it in the simmering sauce.

photoIt didn’t amount to much and would have been better used for a single serving (1/2 pound sausage, and a can each of crushed and diced) but it made do and will add an extra bit of veggies for the fam and will make no difference in flavor!

I Am One Of Those People

Hey Y’all.

Hope you all had a fantastic weekend.  I sure did!!!!!  I had a bunch of pictures from my phone that I sent to myself via email and then promptly deleted only to remember that my phone email is jacked up and now they are gone.  I will quickly brief you on how fab it was.

Friday I had a Slumber Party with a great group of girls.  Made a big chunk of money so I could spoil Kevin on his birthday weekend and buy my cousin and myself tickets to Hanson in August….jealous?

Saturday I got up early and met my friends at the Farmers Market.  I forgot to take pictures of my goodies but I just bought some raw creamed honey, salsa and a pint of blueberries which me, my sis, and Baby Belle ate as soon as I got home.

Then I took my birthday boy to Americana for the brunch.  I had heard great things and so I used that as an excuse to head on over!  I took pictures of all my plates and those are the ones that I deleted like an idiot.  Just trust me though…it was good.  My fave was the lemon ricotta filled crepes with fresh raspberries!  To die for!

After that my sis, Baby Belle and I ran some errands to get ready for Kevin’s birthday BBQ.  The BBQ was so much fun and Kevin had a lot of friends and family stop by to help him celebrate.  I wish I would have taken some pictures because it was incredible!  Kids running around, grown ups talking, eating and drinking, and awesome weather.

Sunday was Kevin’s actual birthday and so we went golfing (Kev’s fave hobby) with another couple.  We were worried storms would ruin the day but it actually was quite hot…and I got my 2nd sunburn of the summer already.

Great weekend!  :)

And now Monday is here….

I mentioned in this post that I wasn’t quite happy with the way I looked in the picture.  :(   I have been doing a really good job of following what I eat but I need to really focus just a little bit more.  I bought this book today.  Calee started talking about this and I have been very curious….I feel like my habits have changed just by reading what she has posted but now I am ready to take it serious…because it is a Monday and all.  Yeah…I am one of those people.  I didn’t want to take my eating habits seriously over the weekend…well because I was going wild eating at a buffet and having beers at a BBQ.

Monday is here and I feel like this:

wednesday blog post.Oh PopSugar…are you telling me that I am coo coo and should have just started this venture when it felt right?  Well…I had to wait until Monday!

Can’t wait to tell you more about what I learn!

Out With The Old….In With WildTree-A Giveaway

Hi friends!

So I need to get back on the band wagon of telling you about my workouts and my eats.

Yesterday I didn’t work out at all.  I couldn’t make it to Primal and it was too dang hot to do my planned walk later in the evening.  I hung out in the cool basement and watched The Voice instead.  Anyone else a fan?

Here is a run down of what I ate all day.

Breakfast 1: 2 hard boiled egg with my vitamins

Breakfast 2: 1/2 container of Chobani with Cookie Dough Nutty Butter mixed in.  I used the last of that flavor and was sad to see she wasn’t producing this month. :(

Lunch: leftovers from dinner last night.  Velveeta processed junk :(

Snack 1: 1 Dove chocolate

Snack 2: Apple with Birthday Cake Nutty Butter

Dinner:  Crock pot egg casserole.  I make this a lot when I am busy.  It is so easy.  Just take a bag of frozen hashbrowns and fill up your crock pot half way.  You then take cooked sausage or bacon and sprinkle it on top and then add some cheese.  More hashbrowns until it is almost to the top and another layer of sausage/bacon and cheese.  I use a dozen eggs, whisk them up and pour them into the crock pot.  Low all day=delish easy dinner.  I had 1 1/2 english muffin with avocado on them as well.  YUM!

Snack 3: smoothie with pineapple and Nikki’s Coconut butter and a few pieces of watermelon.

 

So…about that Velveeta box dinner.  Enough is enough.

IMG_0347Here is a picture of my unorganized cupboards.  It may be hard to see but up there on those top shelves is the bad stuff.  I have a few boxes of potatoes (Kevin’s fave), a couple Hamburger Helper meals, and I am sure some other crazy stuff that you don’t even want to know about.  No more!  I need to get back into clean eating.  I know it will take more prep time but I need to make it a priority for my family.

Luckily I came across a pretty jazzy solution in a company called Wild Tree.  It is a pretty jazzy company with all natural culinary blends made to keep cooking delish and simple.  Check out this video to learn more about it.  Earlier this year I hosted a party and all of the food we sampled was amazing.  We had shrimp scampi and alfredo sauce on noodles for our main course and a bunch of dips as a starter.  The thing that sets Wild Tree apart from other food companies is that it is not just a dip brand.  The culinary blends that are great for making dips are also great for kick starting a healthy and all natural meal for your family.

Toddler Tuesday-Independent Woman

Hi!

Kids grow fast.  Like really fast.  I see tiny newborns and think how did my kid grow up to be basically an adult.  She doesn’t even need me anymore….except to give her owies (is that how you spell it?) kisses.  I love that kissing her owies make them all better.  She is really growing up and letting me know.

She never wants to hold hands.

photo(3)And you can imagine she doesn’t really like the stroller anymore.  I did break down and buy her a leash last year.  I know the backlash I could get from admitting that but we tried it out at the farmers market downtown where it is really busy and she insisted on walking.  She loved the freedom and loved the “monkey backpack”.  Obviously I won’t make her wear it everywhere but when I have my hands full with bags of produce it was helpful to have that so we could both enjoy our time there.

She doesn’t want me to cut up her food anymore.  She likes to eat like a big kid.

photo(4)I do my best to let her experience foods without obliterating them with my kitchen scissors but most of the time I win this and she doesn’t fuss too much.

She wants to help.  This is sometimes really nice.  Like she puts her own dirty clothes in the laundry basket in our room…or if she sees that I have made piles of my clothes on the floor she throws hers there too.  Looks like I need to be a better example.  She really likes to help in the kitchen.

Next thing I know she will be driving a car!

Eats And Excuses

Hey y’all.

Hope you all had a great weekend and for you mama’s out there…a great Mothers Day!

I spent the morning at church with Kevin and his parents followed by lunch at Ruby Tuesday’s.  It was really nice to spend time with them.  In the afternoon we picked up a party platter from Jimmy John’s and met my mom and her boyfriend at the Ledges.  We had a great time!

photo(7)We hiked a trail I haven’t hiked before so it was pretty exciting.  Baby Belle lost interest after awhile and it took some coaxing and piggy back rides to get her to keep moving.  After a picnic dinner we went to McHose park in  Boone to let the rugrat play on the slides and swings.

photo(8)So I have been making a lot of excuses…about my poor eating and lack of consistency in working out.  Wanna hear some?

1.  I can’t make it to Crossfit because there is an ambulance on my road.

2.  I don’t want to be a calorie counter.  I should eat what makes me happy.

3.  My workout buddy isn’t coming today…I don’t want to go to Crossfit without her.

4.  I am sore.  I need to rest just one more day.

5.  My back hurts

6.  I had a bad day.  Fro-yo is the only thing that will make me feel better.

7.  I don’t eat chips very often so I should eat half of this bag.

 

Good gravy I stink.  Time to get back on track.  I have been slacking a bit and I don’t like what I see in that picture of me at the Ledges.  Just needed that visual to remind myself what I am working hard for.

Here are some of my recent eats…not bad at all but just eating it in horrible quantities ;)

photo(2)My very favorite breakfast scramble.  Fried potatoes covered in sausage, avocado and a fried egg.  I eat it every weekend I have time to make a hot breakfast.

Stuff to do or try ASAP-1

Happy Friday!

Oh good gravy….the weeks have been dragging by…..I am so glad it is the weekend.  :)   Can’t wait for Mother’s Day that is for sure.

So I wanted to touch base with you all about my crossfit goals this week.  I didn’t really set any out and I couldn’t get to Primal on Monday or Tuesday.  I did force myself to go Wednesday-Friday though and that was hard.  I hate rolling myself out of bed at 4:15 :(

I decided with the guidance of a great coach there to use these two goals as a platform:

1.  No more knee push ups.  Or at least don’t start there.  Today we had 20 pushups to do in our AMRAP.  I did 5 real pushups, dropped to my knees for 5, did 5 real and then finished with 5 on my knees.  Outside of the WODs I am going to work on real pushups too.

2.  Keep working on my pull up.  Courtney, my coach actually came by and made me use a harder band today.  That made me feel amazing that she believed in me even though I was mad that I had to work harder.  It was great to feel her support because I didn’t think I could do it.  It slowed me down but I did push though :)

3.  I must go 4 days a week.  Done and done.

So last Friday I posted about the folder in my email with all the stuff I wanted to try.  Sadly…only one person responded.  Hey…where are you guys?  Comment on my blog ya hear?  She wanted me to make the Strawberries and Cream Breakfast Rolls.

I really wanted to make them too but I didn’t want to buy cresent rolls.  I wanted to make my own and that took time for yeast to work magic and I stuck too much stuff in my schedule to get that done.  So I voted for the Quinoa Protein Bites.  I had all the stuff on hand (or substitutes I guess) and it took me 20 minutes.  I did it this morning while I was still in a towel and getting me and Baby Belle ready.  The recipe from Shawn Can Blog is here.  Like I said, I modified my bites because I didn’t know what bran buds were and I didn’t want to use dried fruit because I used up some crusty old chocolate protein powder from back in the day when Kevin used to pump iron…..way back in the day.

photo(3)See that big old jug taking up space in our tiny kitchen.  I have a weird thing about wasting food so I am going to use it but ugh…I can’t get rid of it fast enough.  I also used Trader Joe’s Almond Butter instead of the peanut butter.

I put everything in the bowl and mixed it up.

photoIt looked a little wet so I threw in some sunflower seeds and a handful (about a 1/4 a cup) of oatmeal.  I then put it in the fridge as directed to help it firm up.

I then rolled it up into 15 ping pong sized balls.  I put some in the fridge and some in the freezer.  I tasted the mixture but haven’t tried the balls yet but the mixture was tasty!

Leibster Award-5 Months Late

Hey y’all.

So wayyyyy back in December a bloggy friend of mine, Mollie at Sprinkles of Life nominated me for the Leibster Award.  I was in Washington DC at the time and then I dropped of the blogging planet to get my head in order and then I kept pushing off getting my butt in gear.

11 RANDOM FACTS

1.  I obsess about making lists.  Rarely do I use them to make myself be productive but list making is a fun thing for me to do.

photo(5)2.  I am addicted to Pinterest.  It is a sad sad thing.

3.  I was an english major in college.  I went to ISU but never graduated.  I drank too much :(

4.  I don’t really like frosting.  I was never a huge fan of it…even as a kid.  The cupcake I had from Scratch Cupcakery  yesterday was good…even the frosting.  I had the Salty Dog.  YUM!

5.  I am messy.  Now before you think I am nasty hold on!  I am not dirty…just messy.  I don’t pick up after myself.  Our house is generally a mess and while I would like to blame it on the fact that I have a 2 year old…it is generally my fault.

6.  I am obsessed with fro-yo.  OBSESSED!!!!

photo(7)7.  I found out I needed glasses by failing my vision test when renewing my drivers license.  I couldn’t read the letters and numbers in that little machine at all.  They were actually going to take my license away that day……but then I started crying.  They gave me 15 days to get glasses and report back for my new license.  And now I am a four eyes.

8.  I hate running.  I know my blog implies that I like it….but I hate it.  I just wish I was a run lover.  Maybe someday.

9.  I hate talking on the phone.  I do it for my job so I hate talking to people on the phone when I am off work…except on my drive home.  I usually call my mama every day.

10.  I hate driving in the snow.  I get really anxious and upset about it.  It is pretty bad.

11.  I would like to be a foster parent someday.  Not now…I am too busy with life and watching Baby Belle grow but someday.

11 QUESTIONS FROM MOLLIE

1. What is your day job? 

I work at Iowa Mediation Service.  We answer the Iowa Mortgage Help Hotline and I am the primary intake person there.  In December I took the training necessary for me to become a mortgage mediator and I have several files I am currently working on trying to find work out options for people struggling to make their mortgage payments.

2. When you were a kid, what did you want to me when you grew up? 

That varied depending on my mood.  I wanted to become a comedian, a secretary, a teacher, a movie star…the list goes on and on. 

3. What’s your favorite place you’ve visited? 

Kevin and I went to Arizona for part of our honeymoon last year.  Sedona and The Grand Canyon were amazing.  The company wasn’t bad either :)

4.  What’s the farthest place you traveled? 

When I was a junior in high school my family was generous enough to let me join my French class to an amazing trip to France.

5. What’s your favorite restaurant and what do you order there?

  Hmmmm…this is hard.  We try not to eat out much.  I love Mexican though and usually always order carne asada no matter which restaurant we go to.

6. What is your dream job? 

I would love to be an actress….Amy Poehler is hilarious and I want to be just like her.  Or I would want to be a chef…like a good one. :)

7. What’s your favorite TV show? 

I watch way too much tv.  Some of my faves are: Teen Mom,  Real World, Awkward, MasterChef.  Reality tv.  It is sad but it is what I like.

8. What kind of music do you like? 

I listen to everything.  I normally listen to 107.5 in the car and have a handful of random cd’s that I listen too.  Kevin has Pandora in his car and I love the 90’s country station.  When I work out I listen to rap…Little Wayne, Birdman, Jay-Z.

9. How long have you been blogging and why do you do it? 

I think a year!  I have been on and off the bandwagon and really inconsistent but still plugging away.  I love to gather info and share it so I thought this would be a good sounding board.  I also want a way to keep myself accountable for my goals and have a group of people to support me in that. 

10. Do you have siblings? 

Oh golly I do!  Lots of  em.

I have my brother Brandon.

Chaos?  Is that a tradition? :)   Because I have such a large extended family and they all mean so much to me we run around a lot.  J  It gets hectic but being with my fam this time of the year is important to me.  I do want to start a tradition with my little fam at home and get cute PJ’s for the night before and do movie nights.  Now that Baby Belle is old enough to get excited for it I think it will be fun!

Toddler Tuesday-Facebook Conversations

Hey y’all.

Aren’t you Iowans loving this weather?  I missed my crossfit workout yesterday so my workout partner and I did two laps around Gray’s Lake.  It was gorgeous!  :)   We have a little more rain in the near future but that is fine….as long as it stays warm!

So…about Facebook and my toddler…my kid doesn’t have a Facebook page so don’t flip out.  :)   She doesn’t even know what Facebook is.  But I talk about  her a lot on Facebook and I ask a lot of questions to other parents about situations with Baby Belle on Facebook.  I ask most of them to my cousin Marci.  She has 4 kids and we agree with a lot of things when it comes to parenting so she is always great to reach out to for advice.

When she noticed I was going the more natural route with eating she sent me some links to check out.  I wanted to share them with you too.  I haven’t tried any of these yet but they are on my list of Stuff to do or try ASAP.  :)

Why Did The Chicken Cross The Road?

Happy Monday friends!

Hope you all had a great weekend!  I had a busy weekend but it was full of family fun!  I sadly didn’t take a ton of pictures so I don’t have a whole lot I can show you.  I did take a picture of this little cutie.

I talked about how I needed to get back into the groove of eating clean.  I have a long way to go but I got started this weekend.  Now before you get all cray on me…I am totally aware that we should be eating food from local sources and that aren’t pumped full of chemicals to juice them up etc!  We are working on it….but at a slow pace.  We will get there eventually.

I made homemade chicken nuggets.  Something easy that my sister or Kevin can pop in the oven when I am not home at night or get home late.

I didn’t take a lot of pictures of this either but it is easy.  I bought a bunch of  bone-in, skin-on chicken breasts at Hy-Vee for $.99 a pound.  I bought about $15 worth.  I took them home, peeled off the skin and then cut part of the breast out that I could.  I then cut them into bite size pieces.  I make bread at home with my bread maker and grind up the left overs that don’t get eaten right away.  I store these in the freezer to use for this purpose or to make meatballs etc with.

I dipped the cut up pieces of chicken into a an egg/water mix and then coated them with the bread crumbs.  I baked them at 350 for about 15 minutes until they were just cooked through.  They looked like this when they came out.

photo(4)I realize they need more cooking time to really crisp up and get yummy but I didn’t want them to be dry when you put them back into the oven to cook at meal time.  I let them cool off and then put in a gallon freezer baggie to store in the freezer.

photo(2)Ta-da!! as Baby Belle would say.  I got 2 huge gallon baggies full.  I then took the chicken breasts that I mangled up from cutting the meat out of and threw them in the crock pot.  I let it cook on high for about 3-4 hours and ended up with 2 quart sized baggies of shredded chicken breast to use for future recipes.
